The sweet onion is a small white onion devoid of pungency grown in Texas.
As they have thinner skin and more water than other onions, sweet onions do not keep as long. Avoid any that seem too light for their size, as well as obvious blemish. They can keep about 2 weeks at room temperature, longer if kept in a paper bag in the fridge. Always expose them to some air to prevent mold.
To loosen the skin, place the onion under running water before slicing. A mandoline works best for thin slices. Cooking enhances the sweet flavor. Sweet onions are not a substitute for the sharpness of other onions. Toss them in a salad to balance the bitterness of greens.
