Select spring onions based on the green part. It should be bright green and look fresh. If it is withered or if it has decay make sure to avoid it. Spring onions should be stored in the crisper drawer. They can stay up to a week.
Spring onions should be gently washed. The white bulb is not usually eaten. Spring onions on their own do not usually constitute a dish. It is commonly added as a garnish on top of sauteed seafood in Chinese cuisine. It can also be fried and sprinkled on top.
