Romaine lettuce is a tall, sturdy leaf, usually darker green than other lettuces. They sell by the head, a bundle of the firm “ribs” together. Romaine is the only lettuce that can truly cook well!
Check all the leaves. There should be no brown or wilted leaves present. Store unwashed in a plastic bag in the refrigerator, and it should last a few days.
Wash very well before using, then dry thoroughly. A salad spinner works well to dry. Chop the bottom of the stalk. Romaine is perfect for Caesar salad with croutons, olive oil, and Parmesan cheese. Unlike other lettuces, you can braise Romaine lettuce or put it in a soup.
