Roma tomatoes are a slender, firm variety of plum tomatoes. They have chewy walls and a faint umami taste, less overwhelming than other varieties.
Fully ripe Roma are egg-shaped and bright red. They should not be very soft at all. They should resist a firm pinch. Store them in a cool place for a week, but putting them in the refrigerator can halt their ripening.
Roma tomatoes are perfect for salads, as they have little moisture and you can slice them into coin-shapes. Their size is also ideal for home canning. Cut them in half, cover them in olive oil, garlic, and oregano and slice them in the oven for a great dinner side!
