What we know as “beets” are the root of the beet plant. Their deep purple color has use as a food dye, medicine, and even as a performance booster in exercise.
Good beets are round, not rough, and hard to the touch. Make sure you check for soft spots and skin that isn’t tight. The root that extends should be skinny! Pick out similarly sized beets so they cook evenly!
Beets can be roasted by themselves, sliced up and put in a salad, mashed, pickled, or simply steamed and eaten with butter. It can even be juiced for a thick, purple drink!
