Red bananas have skin the color of red leather or clay and flesh cream colored pink or cream. They are softer and sweeter than other varieties, and have an earthy berry taste.
The ripest bananas have a maroon rind and small spotting near the stem. They should be soft, but not too soft, and without bruising. You can store them at room temperature on your countertop.
You can peel and eat it like other varieties. Cut them in half lengthwise to put in a smoothie daiquiri, or in small slices for a salad. Bake them into banana bread, or slice thinly and bake into fritters!
