Parsnips are a root vegetable that looks like a white carrot. They are sweet with an earthier taste.
Choose parsnips that look very white. The whiter they are the sweeter they will taste. You will want smaller parsnips compared to large ones. Also look for intact roots. As always, avoid any signs of decay as well as yellowing or withering. To store, wrap in a paper towel and place in a plastic bag. They can go in the crisper and will last up to two weeks.
Parsnips can be used similarly to carrots. Wash and peel them if large. You can turn them to a mash or you can roast them with carrots in the oven.
