Golden beets are a golden colored beet with a rich earthy taste.
Select golden beets that are evenly sized. Avoid any beets that have soft or shriveled spots. The slender part of the beet near the bottom should be thin. The leaves, if attached, should be green. Put beets in a plastic bag and place in the crisper. They stay good for up to 10 days.
Golden beets are great lightly roasted. You can also sautee them with butter and garlic for a delicious hearty meal. If you shred it, the beet can be used in salads as well.
