Escarole is a slightly bitter green with a relation to endive. It is a primary ingredient in Italian wedding soup.
The plant should look fresh and green. There should be no signs of decay. If you would like to store it, place it in a perforated plastic bag with a wet paper towel. Switch out the paper towel as it begins to dry. It can stay good for up to a week. You can also freeze it.
Escarole needs to be washed. Escarole goes great in salad or sautéed. Of course, escarole is great for soup. It holds up well to cooking and doesn’t overpower the other flavors. Give it a shot in italian wedding soup!
