An English cucumber is actually different than a regular cucumber. It is longer and thinner with a slightly sweet taste.
English cucumbers should have a bright green skin tone with even coloring. The cucumber should be firm. Avoid any cucumbers that have blemishes or yellowing. Put cucumbers on the counter, not in the fridge. Do not store near fruit as it will cause them to yellow quicker.
These cucumbers should be washed with water. You can eat them plain, even the skin. You may also chop them into slices and mix them with chili oil and salt for a popular Taiwanese dish. They also go great on sandwiches.
