Endive looks sort of like a head of lettuce. It has a slightly nutty, bitter taste.
Choose plants that feel crisp and are bright green. Avoid any heads that have wilting or signs of decay. They can be stored in the fridge for up to a week.
Endive does very well braised. They don’t need a lot of additions. You can simply use butter, pepper, a little bit of salt and you will get a great dish. You can also use them in stir fry. If you julienne them, they go great in a salad. Grilling is also an option. Finally, they can be a replacement for a chip! The leaves hold up well against dips.
