Empress Plum

Empress plums are also called prune plums. They are smaller and more oval than black plums.

Quality Check

Check the color of the plum. It should be a purple color, almost blue. The fruit itself should give off a slightly sweet scent. Finally, when squeezed the plum should have a slight give. If they need to be stored you can put them in the crisper for up to five days.

Express plums do great in sweets. You can also eat them out of hand without worry of a stone or seed. However, they are excellent in sauces. You can make a rich chutney with them. Express plums pair well with poultry, game, and meat in general.
