Chinese okra is also called luffa. It tastes like zucchini. It is great at sopping up sauces.
Choose a firm piece of okra that does not have any blemishes. It should be a little under a foot with velvety skin that has a slight give. You can store it in the refrigerator for up to 10 days. Any longer and it can become hard and inedible.
You can stir-fry it with a little egg for a delicious meal. They can also be pickled and eaten. Chinese okra goes great with any sauce since it’ll suck it all up. Try it with a bit of garlic and chili for a great kick!
