A member of the cabbage family and native to China, bok choy (which means “white vegetable” in Cantonese) is sometimes called “Chinese cabbage” in the United States.
Select bok choy that has firm, fresh leaves and a bright white base stalk. Store in the fridge in an airtight bag until ready to use.
