Bianca eggplants are an heirloom eggplant native to Southeast Asia. They have a slightly sweet, fleshy taste.
When selecting bianca eggplants look for a nice sheen to the skin. The size does not matter too much, however a fist-size is normal. Biancas can be stored for a few days in the fridge. To freeze, peel them, cook them by roasting or blanching, and then place them in the freezer.
These eggplants have a rich flavor that holds up well to roasting. They can also be coated with olive oil, salt, pepper and then grilled. Finally, you can also slice, bread, and fry them for eggplant chips!
